I live in Japan right now, and I share your enthusiasm for Japanese food presentation.

Going beyond cuisine, I suppose you've been to a Muji store? I like how they only stock nice-looking items in the store's corporate colour palette — white, beige, charcoal, burgundy, etc. Only in a Japanese store…

In a broader sense of the word, it could also include foods whose ingredients or cooking methods were subsequently introduced from abroad, but which have been developed by Japanese who made them their own. Japanese cuisine is known for its emphasis on seasonality of food (旬, shun), quality of ingredients and presentation

Japanese love arts. Even in their foods, they put art on it. People will tend to buy those foods that are attractive to the eye so I think that's the main purpose of putting art on their cuisines.
